Tamarind Balls

2 cups tamarind pulp
1 tbsp salt
¼ tsp hot pepper
2¼ cups sugar

Remove tamarind from shell. Remove seeds and boil tamarind in salt water until soft. Allow to cool and drain water. Add pep­per and 2 cups sugar, and com­bine until mix­ture is firm enough to form balls. Place the remain­ing sugar in a shal­low plate. Shape tamarind balls and roll in the remain­ing sugar. Serve as is or wrap in wax paper until ready to eat.
