Sor­rel Jam

jam2 lbs sor­rel sepals seeded
1 stick cin­na­mon
3 lbs gran­u­lated sugar
a jar

Wash sor­rel and boil in a pot with cin­na­mon. Once sepals are soft, remove from heat and add sugar. Place mix­ture in blender and blend until smooth. Return mix­ture to heat and allow to thicken. Once set, allow to cool, pour in jar and seal.
